Italian Garden Harvest

Ingredients you’ll need: Serves 4-6

15 cipollini onions-outer skin and root end removed

3 cloves fresh garlic-crushed and sliced

1 red bell pepper-chopped with veins and seeds removed

1 zucchini-cut into 1/2 inch pieces

1 yellow squash-cut into 1/2 pieces

6-8 crimini mushrooms-cleaned, stem cut off and sliced into 1/4 inch slices

10 grape tomatoes-cut in half lengthwise

2 tbsp. olive oil

2 tbsp. fresh rosemary-oven roasted for 3 minutes and then chopped

2 tbsp. fresh flat leaf parsley-chopped

Kosher salt and fresh ground pepper to taste

How to prepare:

Over medium high heat, add olive oil. Heat for 3 minutes. Add cipollini onions. Sauté for 4 minutes. Add garlic, red bell pepper, zucchini, and squash. Sauté for 4 minutes. Add tomatoes and mushrooms. Sauté another 4 minutes. Lightly season with salt and pepper. Add rosemary and parsley. Serve.
