Good For You Beef Stew

Ingredients you’ll need per serving:

4 oz. lean top sirloin-cubed into 1 inch chunks

2 cloves fresh garlic-minced

1/4 cup yellow onion-cut into 1/2 chunks

3/4 cup green cabbage-chopped

1/2 stalk celery-chopped fine

1 collard green leaf-blanched, stem removed, and chopped

1/4 cup fresh basil-chopped

1/2 cup fresh baby spinach-chopped

2 tbsp. Aged Balsamic vinegar

1/2 cup fat free low sodium beef broth

1/2 cup water

1/2 tsp. tomato paste with no added sugars-just paste!

1/2 tsp. garlic powder

1 tsp. crushed thyme

Kosher salt and fresh ground pepper to taste

 

How to prepare: a cast iron enamel casserole pot works best-like Le Creuset

Over medium high heat, brown steak. Add garlic and onion, season with garlic powder, thyme, salt and pepper. Cover and cook for 3 minutes. Uncover, add cabbage, collard greens, celery, Aged Balsamic vinegar, beef broth, and water. Cover again for 5 minutes. Uncover and stir in tomato paste. Add spinach and basil. Cover again for another 5 minutes. Serve.
