Denver Egg White Americano Omelete

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients you’ll need per serving:
2 egg whites
1 tbsp. chopped yellow onion
1 tbsp. chopped red bell pepper
1 tbsp. chopped green bell pepper
2 tsp. fat free feta
kosher salt and pepper to taste
2 grape tomatoes-chopped
1/2 tsp. fresh chopped chives

How to prepare: Use a non-stick omelet pan
In a separate pan, brown onion, green pepper, and red pepper. Season with salt and pepper. Wisk egg whites until frothy. Pour into heated omelet pan. Sprinkle onion, peppers, and feta across the top of the eggs. Season with salt and pepper. Cook on med-low heat and cover with a life for approximately 3-5 minutes or until egg is cooked through. Taking a rubber spatula, gently loosen the omelet from the pan onto a plate. Garnish with tomatoes and chives.  Done!
