Ingredients you’ll need per serving:

4 oz. Eye of Round steak

1/4 cup green bell pepper-sliced

1/4 cup red bell pepper-sliced

1/4 cup yellow bell pepper-sliced

1/2 cup yellow onion-sliced

2 cloves fresh garlic-minced

3 collard green leaves-blanched, center stem removed, and chopped

1/2 cup red cabbage-chopped

1 tsp. Italian seasoning

2 tsp. Mild curry powder-or to taste

kosher salt and fresh ground pepper-to taste

1/4 tsp. Tumeric powder

3 tbsp. tomato puree

1 cup water

 


How to prepare:

Season steak with salt and pepper and braise. Add 1 cup of water, garlic, onion, peppers, cabbage, and collard greens. Season with salt, pepper, Italian seasoning, curry powder, tumeric, and tomato puree. Remove steak and slice into bite sized pieces. Return to the pan and simmer for another 3-5 minutes or until vegetatbles are al dente. Enjoy!
